I have recently installed a Stage 2 Whipple on my Dark Horse, alongside this I did the OPGs & Crack Sproket so I can run a 3.250 pully.

I have factory Cats, however I am installing long tubes and a new clutch but just wanted to do it piece by piece to eliminate any errors in install.

I am noticing some cloudy white water come out of the exhaust, which when it dries up it leaves a white powder substance. When reving as well can see some smoke. Is this normal? If not any possible fixes?

(Oil looks life and coolant levels also look fine)

Water in the exhaust is normal. It's condensation and typically burns off once the car is running and warmed up.

What color smoke are you seeing? I get a bit of smoke at startup especially if the car has been sitting for a while. White smoke is typically from condensation as well. If it's heavy white smoke it could be coolant. As long as your coolant level is good and the exhaust doesn't smell like coolant you're good to go.
