Are you sure the dealership actually ordered your car on 12/5/17? It sounds like you car was actually ordered on 1/10/18. The order date should be correct on Cotus. Order date on Cotus for my car is correct.
It's common for Cotus to not show all your options in the vehicle summary. I wouldn't worry about it. Just make sure it's on your window sticker when that shows up on Cotus.
From past experience dealing with Cotus, transit time is off by a day or two but ironically, Cotus has been accurate for me showing when the vehicles I ordered were delivered. My last Ford order, I knew my truck was delivered before my salesman.
I looked at the e-mail I received after I registered and everything is correct. The odd thing is the invalid info e-mail, my order number isn't correct. My order number starts with 0 and the 0 wasn't in the invalid e-mail I received but it was in the e-mail confirmation.

You've been waiting since 12/17 for a VIN? Wow. Not sure how that is possible. The only order that took forever for a VIN for me was when I ordered a Focus ST when they first came out. Only reason why that took a long time for a VIN was due to a production delay.
