I have a GT with performance package (19" summer tires), the door jam states 32psi, when delivered tires were at 37-38, I drove it that way for about 500 miles. Yesterday I drove it really hard through Eastern Tennessee's twisty mountain roads. Before I went for that drive I dropped them to 32psi and was quite pleased at how she stuck to the road in aggressive turns. After the tires heated up they were at about 36-37psi, then cooled back to 32 psi.
Just wondering where you are all running your tires at.....

I would run them at the Recommended PSI. If you are doing a track day I would jump them up five or so pounds till it felt good. The cars are all shipped with over inflated tires to help them on the transport from cold flat spotting the tires. The dealer should have lowered the tire psi during the PDI service but that is very common they skip it.

I run what's on the placard in the door jam. Some who track under-inflate their tires, allowing them to flex more, potentially grip the surface better.

Your tires were overinflated, for shipping from the factory. When these cars leave the factory, the pressures are 40 psi / 2.75 Bar. Dealers should return the pressures to recommended, but they don't always do so.

Long-term, to confirm pressures and alignment, you can buy two tools: a nice pressure gauge and a tread depth monitor.

I have a calibrated tire gauge I use at my machine shop, I use that on all my cars. I have OCD when it comes to getting them to all read the same on the dash screen unfortunately lol
