Are upgraded sway bars on the Dark Horse worth it for regular track days and drag racing?

No but it probably should have been. Already have the Stage 2 Whipple installed.

Drag racing? No. Many people remove their front sway bar (or disconnect it) for the drag strip.

Road course? Maybe, but Ford has it dialed in pretty good on the sway bars that are included. So you're going to want to test to see if it's any faster.
