To unplug advancetrac (which I do not advise), you open the hood. Look on the right side near the fender and there is a plug that is pigtailed at the end. If you unplug taht, it unplugs advancetrac altogether and it will not intrude. ABS still works, but no advancetrac. Advancetrac has a certain level of intervention even in track mode, but if unplugged it's gone. Some people will swear that advancetrac can cause as many problems as it solves. Particularly if using bigger stickier tires than the car came with. I had an issue once where advancetrac did all kinds of whacky crap and tried to save me but interpreted my driving incorrectly and I lost the ass end of the car to a 270 degree spin. I don't use it or traction control at all anymore in dry conditions.

You guys are lucky.
As per regulations from 2024 onwards, here is the routine for someone in the EU each time we start the Mustang :
. Turn off automatic audio alert for the speed alert (including if one drives at >30km/h in the city)…
. Turn off automatic lane assist
. Turn off driver assist mode (hands on wheel !)
. Finally, put the car in the actual drive profile we want.
One wonders why the EU is not popular…
They do hate cars and drivers don't they. The funniest thing though, the UK left, but still have all that crap on their cars too.

I usually just select custom, that turns off stop/start, sets sport exhaust and steering, then I just kill lane assist.
Good to go.

I highly doubt that stickier tires increase any kind of risk. The better the grip, the better it works.
And I also cannot imagine it makes you spin, in fact, quite the opposite, if you try to drift, it will not allow you to do that.
Maybe there was a defect or something in your case(?).

The reason to turn it off is to my knowledge to allow drift and slide to go through corners faster in situations where a controlled drift gains you time.
But in situations in which you have to immediately and harshly turn left or right to avoid a collision, not even the best driver in the world can outperform ESP.
The Mustang V had no ESP and many wannabes crashed it.

I can't speak in terms of data bc I have done no real testing. Most of the claims out there are anecdotal. From what I understand, advancetrac, or ESP, works based on how it is tuned to the car with it's suspension geometry and tire setup. When any of that changes drastically, it may change how the system works (just like anything). The system workd by interpreting what it thinks the driver intends and the situation. It may cut accelation, brake, or accelerate and intervene. The system isn't always correct. Just like with lane assist or any other system - it is theory and not perfect. People tracking their cars have been making claims about experiences with advancetrac for years and some of us chose to unplug it and avoid intervention. I'd like to see data on that, but at this point we have no hard facts.

The advancedtrac from Ford is one of the best stability platforms on the market to date. It utilities gyros and accelerometers to measure angle of movement vs angle of desired movement from steering wheel position and other inputs. Drifting does not fit into standard driving profiles for the street. That is the only reason to disable it in a controlled environment, IE a track. On the road it could potentially save your life when you are going sideways in an unintended manner, IE sliding on ice. There are very few drivers in today's world that benefit from disabling this system and I would not advocate for them to do so in a public forum.

***Side note: if you are involved in an accident and your insurance company does an investigation and figures out that you have unplugged the nanny plug while driving it on the street, they will drop your claim.***
